Chicken nuggets are a kid’s favorite, but anything that’s made from caged chickens, is coated in grains, and fried in cheap vegetable oil is off the menu. At our house we’ve made a simple and tasty alternative to typical chicken nuggets that your picky eaters are sure to love.
Recipe:
2 chicken breasts cubed
¼ cup beef tallow
¼ cup coconut flour (or just enough to coat the chicken)
2 tsp honey
Dust of turmeric for color
Salt to taste
Directions:
Cube the chicken. In a bowl, add the honey, turmeric, salt, and flour. Coat the chicken with flour mixture, making sure to thoroughly cover all areas. Heat tallow in a deep saute pan. Add coated chicken when hot. Make sure the chicken gets thoroughly coated with oil. If not, add a little more tallow. You don’t want dry bits of flour. This is a fried recipe! Turn frequently so as not to burn the honey. Serve and enjoy!

Hi Peggy,
I also like making coconut chicken nuggets! I just dip chicken pieces in a whisked egg, and then roll them in dessicated coconut, and fry like yours. Yum! Kids like them in their lunchboxes, too.
