Interview With Me At Livin’ La Vida Low-Carb!

In case you don’t already know, Jimmy Moore runs the very popular low-carb website Livin’ La Vida Low-Carb. He’s a pretty busy guy in the low carb community and likes us Paleo folk because most of us are low-carb ourselves. So last month Jimmy did an interview with me to find out what I eat and what I’m up to in the primalshpere.

He had actually asked me a few months ago to be on his podcast Low Carb Conversations but I guess I kinda chickened out since I had abandoned the zero-carb lifestyle when I started eating sugar last summer. I thought, I can’t be on a low carb show if I eat sugar! Jimmy reminded me that I don’t actually eat all that much though. I guess I thought I was high-carb or something now that I eat the god forsaken, Paleo scorned, low-carb-anti-christ, table sugar. Moo ha ha. (Why not a more acceptable carbohydrate source like sweet potatoes or fruit, you ask? They just don’t jive with my digestion, that’s all. I don’t have anything against nutrients, I promise.)

So, yeah, of course Jimmy, you’re right. I am still pretty low carb. Duh! Compare me now to me then and, well, no. Compare me anytime to the rest of the world and yeah, I’m low-carb.

So last month I opted in for his Livin’ La Vida Low-Carb show and it was a lot of fun. He is a pleasure to chat with!

      Peggy, how do you control cortizol? I just eliminated all starch after starting to feel bad again, and I fell better after only 1 day, but I already feel the stress hormones rising. I drink OJ with sugar with meals, but it doesn’t seem to be enough. What’s your secret?

      • Well, personally, fruit raises my cortisol so I avoid that like the plague. When I was doing zero carb my cortisol was raised somewhat. Not enough to be bothersome though. I always had great energy and my sleep wasn’t affected, other than that I didn’t require much. Once I added some carbs back in, I wasn’t bouncing off the walls quite as much. My cortisol levels couldn’t have been raised too much, though, because I didn’t have symptoms of hormone imbalance.

        Everyone is different on this. Some people feel super tired doing zero carb and their thyroid gets all jacked up and the rest of us feel great. I don’t know why this is exactly.

        Intermittent fasting while doing zero carb could raise my cortisol a little higher and that never felt good. Problem is, it was so easy to intermittent fast on zero carb…

        Anyway, I have no issues with raised stress hormones anymore, partly due to adding sugar, partly due to avoiding foods I don’t tolerate. And for me, avoiding fruit is huge.

  3. Nice interview. I’m intrigued by your healing journey and your willingness to experiment and alter your diet as you recover your health. I was struck by your revelation you had had multiple courses of antibiotics in your youth. I’m wondering if that might be the root of many food intolerances – by wiping out friendly bacteria that help us digest. Glad that you are brave enough to start adding foods back to your diet as you experience fewer symptoms. Those foods feed beneficial organisms and should help improve the ability to handle them. It seems like elimination diets carried on for too long end up depleting us. Dr. Cate Shanahan believes that as the gut heals over time, even celiacs should be able to tolerate gluten.

    • Absolutely. I am quite sure those years on antibiotics played a huge role in my difficult path to health. Unfortunately, people like me may never return to normal. Recent research has suggested that for many people on long term anti-biotics, gut health is altered and destroyed permanently. I’ve guessed this to be the case over the years as repairing my health has been so difficult and I need to maintain such a strict diet to be healthy.
